~I went to my local natural foods store today for a few items, and spent a little while at the register chatting with the cashier and the man in line behind me about everything, from the local produce to making a hutch. I thought to myself how wonderful interactions like this are, and how rare these days. I know it would not have taken place at the big supermarket.
~Discovered purple bell peppers. I had no idea such things existed, and I was so tickled to discover them. They taste very much like the green ones, and are white on the inside, but are just gorgeous on the outside. I might need to do a still life painting.
~If you have never tried dried, unsweetened, unsulphured pineapple then you are missing out. I can’t ever eat the sugary stuff that is so much more common again. They saved the day for me today, when I got hunger pangs while running pre-dinner errands.
~We made popsicles again. This time we used wild blueberries and “banilla” yogurt. Yum!
~Also made kale chips again. Jeramy and I devoured them in no time flat, despite the fact that I overcooked them slightly.
~Tonight’s dinner was a recipe I made up on the fly: chicken, kale, and (purple) bell pepper with pesto, over whole grain pasta, with a sprinkle of parmesan cheese. Jeramy sautéed the chicken and bell pepper with garlic and olive oil. Then, I added the pesto (which was homemade by GG) and a splash or two of vegetable stock, tossed on the kale, and covered the pan to let the whole thing come together and for the kale to wilt nicely. The whole grain pasta was a nice base, and added some extra dietary fiber. The parmesan cheese added extra yum. Not only was dinner delicious, but I felt satisfaction over the fact that I made it up myself based on what was fresh. (Next time I shall add chopped tomatoes.)
